Chicken Soup

Just feels so good on the tummy

1. Whole chicken - (meaty) such as a roaster - take the bag and entrails out of the neck
2. 1 sweet onion - sliced thick or thin - as you like it
3. Some carrots - sliced on the diagonal - again as many or as little as you like
4. Celery - sliced on the diagonal - as much or not as you want
5. Bell pepper - thin slices - I like one big green pepper
6. Garlic cloves - peeled and clove - a large bulb or more
7. Salt and pepper to taste
8. Big pot (with a vented lid) to hold the entire chicken and enough water to keep it covered as it reduces down.

adding water to keep chicken covered, simmer in covered vented pot on medium / medium low until the meat falls off the bone and the gristle is almost gelatinous.
let cool to touch. If refrigerated the fat will solidify and be easier to remove.
pour off the broth and save.

separate the bones, gristle and fat from the chicken. Use your fingers so you make sure all the bones are removed.
return the chicken with the vegetables into the broth. Cover and simmer until the vegetables are soft or to your liking. I tend to like them not quite mushy.

Strawberry Bavarian Cream
makes 6 servings

1 pkg (16 oz) frozen strawberry halves
1/2 T lemon juice
2 envelopes unflavored gelatin
3/4 cup hot milk
2 egg yolks
1 cup heavy cream

1. Remove strawberries from freezer. Open package and cut the frozen berries into 12 squares.

2. Put lemon juice, gelatin and hot milk into blender container. Cover and blend on high speed for 30 seconds.

3. With blades spinning, remove inner cap or cover and add egg yolks and pour in the cream. Then quickly begin to add the strawberry squares, one at a time. As the mixture begins to set, push the frozen berry squares down into the blades with a thin rubber spatula.

4. Spoon into sherbet glasses; serve with a garnish of whipped cream and a fresh strawberry.

Crock pot Chicken

1 whole chicken (washed and trimmed) (if cut up time may vary)
salt and pepper to taste
1 chopped onion (optional)
1 can rotel tomatos

Place seasoned chicken (legs up :P ) in crock pot, put in onions and pour can of rotel over chicken. Let cook on low for approx. 8 hrs Cook on high approx 4 hrs. Simple and tasty chicken.....(to make sure chicken is done
when punctured juices should run clear)

Drexxell's Spicy Potatoes (good side dish to Kielbasa and other sausage dishes)
(Invented in college...the only recipe I ever "made up")

Begin with about 8-10 good sized baking potatoes, peeled and cut into coins about 1/4 inch thick.
Pour about 3 tablespoons of oil into a frying pan and heat on high on the stovetop.
Add potato coins to oil
Add the following spices, all at about a teaspoon level, while stirring throughout the potatoes:

Rosemary
Oregano
Thyme
Basil
Garlic Powder
Dried chopped onions
Salt
Pepper
Red (cayenne) pepper

Stir and mix potatoes and spices until the potatoes are just soft enough to
cut with the edge of a dull spatula. Serve hot.
