Anyone know if it's possible to fry up salt pork (for a corn chowder) without sustaining third degree splatter burns?

Put a lid on the skillet and use a long-handled fork to turn the pieces when necessary.

Lower the heat, you don't have to do it on "high". You need it about halfway between medium and high, or just a bit lower.

Use less oil, the bare minimum, since the fat from the pork will provide most of what you need.

They do make what looks like a fine mesh screen on a handle that you can use to cover frying bacon, pork, whatever... but eventually ya gotta take it off to flip the stuff....

Lastly, believe it or not, use a wok. I used my electric wok last night to dredge the beef for beef stew today, and nary a splatter. Last time I every use a skillet for something like that.

I wear long sleeves, gloves, and my paintball mask when I cook stuff that splutters hot oil.

Huh, I got every other gizmo in the kitchen I think... never even used the ice cream maker. Maybe Kai will get me a geerlok for Christmas
